In our list of easy gluten free recipes, this one has to come near the top. Besides being Jamie’s favourite tea – the one he always asks for when given a choice – it is made of storecupboard ingredients, and only takes about fifteen minutes to make! (Great for camping too!)
Ingredients (this much feeds the two adults and two children in our family perfectly)
- tin of corned beef (I have never found any that contains gluten, but check!)
- 1 small tin of sweetcorn
- 1 tin of baked beans (again, double check that it is a gluten free brand)
- 5/6 medium sized potatoes
- grated cheese
- mushrooms if you like them! (my kids don’t!)
Cube the potatoes and boil for ten minutes
Chop the corned beef and throw that and everything else except the cheese into a frying pan and heat on low, stirring regularly until heated through. Add the potatoes and stir. Add grated cheese last thing so it’s just melted in when you serve.
