Easy Gluten Free Recipes: Gluten Free Cheesy Fish Pie

Another easy gluten free recipe.  We have this one as often as I go to the fish market end of town!  Jamie loves it.  You do need some gluten free bread crumbs (which taste absolutely fine in this recipe) but if you don’t happen to have any in the house, these can be cheaply replaced by crushed plain crisps (check they are the gluten free variety – some brands are and some aren’t!)

Again, the emphasis is on the easy.  About ten minutes of work and half an hour in the oven, so very do-able at the end of a day’s work!

Gluten Free Cheesy Fish Pie (feeds 4/5)

Ingredients

  • 700g haddock fillets, skinned and chopped
  • medium onion, chopped small
  • crushed garlic clove
  • 400g tin chopped tomatoes
  • butter/margarine
  • pinch of thyme
  • 2 pinches of parsley
  • 25g (approx) gluten free bread crumbs orcrushed gf plain crisps
  • 50g grated cheese

Method

Fry the onoin and garlic in the butter for a couple of minutes then add the tomatoes, parsley and thyme.  Simmer for about ten minutes before pouring over the fish in a shallow ovenproof dish.

Sprinkle the breadcrumbs or crisps and cheese over the top.

Bake at Gas 4/ 180′C for about half an hour.
