Of all my easy gluten free recipes, this is probably the one I use most regularly. And it seriously is the easiest in the world. In fact I am teaching my seven year old daughter to make it (thus reducing my baking time – but not by much!) Jamie is also going to learn, when I can get him off the Wii Fit!!
Easy Gluten Free Sponge Cake
- 150g gluten free self raising flour (or rice flour)
- 150g sugar
- 150g margarine/butter
- 3 eggs
- teaspoon gluten free baking powder
(If you want to change the flavour, add 25g of cocoa powder instead of flour, or lemon juice, or coffee, or whatever you can think of!)
Put everything in a mixing bowl, and beat together. Share between two 6″ cake tins, lined and greased OR 24 paper cake cases
Bake at 180′C/ Gas 5 for about twenty minutes until golden, cool off and either sandwich together with jam or ice.
How easy is that?! Once you have made it once, you will definitely be making it again!
