I have found the gluten free lunchbox to be more of a challenge than the gluten free evening meal.  Especially for children!  The thought of sending Jamie into school with soup is quite scary (and I don’t think the lunchtime staff would be too pleased either) and unlike adults, who can take in a baked potato or the left-overs of last night’s casserole to microwave children are usually limited to what will go in their lunchbox. 

In the UK there is some government help once you have been registered with celiac disease (is it the same in other countries?  I’d love to know – please comment!) so he does take gluten free bread rolls about half the time.  But gluten free bread leaves a lot to be desired, so I’ve been working on alternatives and over the next few weeks I’m going to post some of his favourites (which his non-celiac little sister also enjoys).

Honeyed Chicken Drumsticks

Ingredients

  • 4 chicken drumsticks
  • 2 tblspoo2 tblspoons tomato ketchup (catsup)
  • 2 tblspoons clear honey
  • 2 tblspoons sunflower oil
  • 2 tblspoons lemon juice

Method

Whisk all the ingredients (except the drumsticks) together in a medium sized mixing bowl.

Using a sharp knife, cut two or three deep slashes into each drumstick

Leave the drumsticks to marinate in the mixture in the fridge for a couple of hours (or overnight)

Place drumsticks on a baking try and cover loosely with foil.  Bake at 180′C / gas 5 for about 20mins then turn over and baste with the remaining mixture.  Bake for a further 10mins until the juices run clear from the chicken.

Allow to cool completely and wrap a piece o silver foil around the end of each one to avoid sticky fingers!
