Easy Gluten Free Recipes: Gluten Free Chocolate Chip Cookies
November 2nd, 2008 by admin
These gluten free chocolate chip cookies are a definite favorite in our house: they never last for more than a couple of days! (especially delicious warm from the oven!)
Ingredients
- 100g castor sugar
- 100g margarine
- 1 egg (beaten)
- half a teaspoon vanilla essence
- 6oz gluten free plain flour
- half a teaspoon xantham gum
- 6oz milk chocolate chips
Method
- Cream together the margarine and sugar
- Mix in the beaten egg and vanilla essence - the creamier you can get the mixture, the better.
- Stir in the flour and xantham gum then add the chocolate chips
- Spoon onto a greased baking sheet (about a tablespoon full of mixture per cookie) and flatten slightly with a fork.
- Bake for 10-15mins at 180′C/Gas mark 5 until golden brown and slightly soft in the middle.
- Any that remain after cooling should be kept in an airtight container and hidden well!

Sounds good.
where do you get the xantham gum?
Very useful. I am researching an article on this. Bookmarked!
