Easy Gluten Free Recipes: Gluten Free Apple Crumble

When it comes to easy gluten free recipes this is another winner.  And another of those relief moments for Jamie when he realised that apple crumble was still on the menu for him.

Of course, gluten free apple crumble could become gluten free rhubarb crumble or gluten free apple and blackberry crumble or gluten free any-thing you like crumble!

Ingredients

  • 150g either plain gluten free flour or rice flour (both work!)
  • 75g margarine
  • 125g brown/demerara sugar
  • 1 teaspoon xanthan gum  (this is important because it gives the crumble a bit of stickability and stretch. Otherwise it is a very crumbly crumble!)
  • 4 large cooking apples, or large tin of fruit (if cheating!)
  • spoonful of brown sugar (more if you have a sweet tooth)
  • half teaspoon of cinnamon

(if you can eat oats it is nice to replace 1/3 of the flour with oats.  Jamie can’t, much to his distress!)

Method

If you are using real fruit, peel, chop, add a spoonful of brown sugar and cinnamon to tase and heat until soft on a gentle heat.  Put aside in ovenproof dish.

Rub together the flour, margarine and xanthan gum with the fingertips until it looks like breadcrumbs. (If you are using oats, mix them in at this stage)

Add sugar and mix well

Sprinkle the crumble topping onto the fruit in an ovenproof dish

Bake t 180′C / Gas mark 5  for 50 minutes until golden brown.

My family is divided on whether it is better with cream, custard or vanilla ice-cream.  Jamie and his Dad usually have all three!
