Easy Gluten Free Recipes: Gluten Free Chocolate Chip Cookies

These gluten free chocolate chip cookies are a definite favorite in our house: they never last for more than a couple of days!  (especially delicious warm from the oven!)

Ingredients

  • 100g castor sugar
  • 100g margarine                                                
  • 1 egg (beaten)
  • half a teaspoon vanilla essence
  • 6oz gluten free plain flour
  • half a teaspoon xantham gum
  • 6oz milk chocolate chips

Method

  1. Cream together the margarine and sugar
  2. Mix in the beaten egg and vanilla essence – the creamier you can get the mixture, the better.
  3. Stir in the flour and xantham gum then add the chocolate chips
  4. Spoon onto a greased baking sheet (about a tablespoon full of mixture per cookie) and flatten slightly with a fork.
  5. Bake for 10-15mins at 180′C/Gas mark 5 until golden brown and slightly soft in the middle.
  6. Any that remain after cooling should be kept in an airtight container and hidden well!
